Steak Enchiladas with Queso Sauce & Jalapeno Sea Salt
Ingredients;
2 sweet bell peppers
1/2 sweet onion
1/2 tsp Spice Crave Jalapeno Sea Salt
2 green onions
6 flour tortillas
1 oz light cream cheese
2 oz shredded jack cheese
10 oz steak strips
Also needed;
Olive Oil
Spice Crave Sea Salts
Cooking Spray
Cooking Directions;
Pre-heat over to 400 degrees
1. Prepare ingredients...
Trim and chop green onions.
Keep white and green onion portions separate.
Thinly slice steak into strips.
Slice bell pepper and onions into strips.
2. Cook the Enchilada Filling
Set a medium non-stick pan over mid-high heat.
Add two table spoons of olive oil.
Add steak to pan, cook for 2 minutes.
Add peppers, onion strips, white portions of green onions and Spice Crave Jalapeno Sea Salt to hot pan. Cook for 4-6 minutes.
Remove from burner and add in 1 oz of shredded jack cheese.
Rest for 3 minutes.
On a small pan, lightly fry 1 oz of onion strips and set aside for topping.
3. Assemble the Enchiladas
Wrap stacked tortillas in a paper napkin and microwave for 20 seconds.
Tortillas will be easier to work with when wrapping the filling.
Divide filling evenly among tortillas.
Fold tortilla overfilling, then tuck tortilla under and roll.
Repeat with remaining tortillas.
4. Bake to Enchiladas
Lightly spray a baking pan with nonstick cooking spray.
Place enchiladas in pan.
Bake for 5-7 minutes (or until tortillas start to lightly brown).
While enchiladas bake, make cheese sauce.
5. Make Queso Topping
Place a small pot over med-high heat.
Add 1/4 cup of water.
Add 1 oz cream cheese.
Add 1 oz jack cheese.
Add salt/pepper/spice to taste. (Spice Crave Jalapeno Sea Salt)
6. Plate the Dish
Place the enchiladas on plates.
Top with queso sauce.
Top with green portion of green onions.
Top with fried onion strips.
